Rémoulade sauce is a wonderful cold, French classic sauce which is often served with cold meats, fish and shellfish.

Ingredients
  

  • 250 ml mayonnaise home made
  • 1 tablespoon caper chopped finely
  • 0.5 tablespoon chervil chopped finely
  • 0.5 tablespoon chives chopped finely
  • 0.5 tablespoon parsley chopped finely
  • 0.5 tablespoon tarragon chopped finely
  • 3 drops anchovy essence
  • 2 small pickled gherkin chopped finely
  • pepper freshly ground

Method
 

  1. Mix all the ingredients together, season to taste with salt and pepper and place in the refrigerator until you are ready to use.
