crostini with curried shrimp

A quick little appetiser which is slightly spicy. The onions break down in the sauce and help to bind the ingredients. It can be served on warm slices of toasted ciabatta or baguette.

Ingredients
  

  • 400 g frozen prawns
  • 1 bunch spring onion greens only
  • 2 teaspoons thai red curry paste
  • 2 teaspoons tom ka paste
  • 2 tablespoons olive oil extra virgin
  • salt
  • pepper freshly ground

Method
 

  1. Defrost the prawns under warm running water.
  2. Heat the olive oil and fry the curry and tom ka paste for a couple of minutes. Add the spring onions and fry for a further two minutes. When you are ready to serve, add the shrimps, a pinch of salt and plenty of freshly ground black pepper and fry for a further 2 minutes.
  3. Serve on warm slices of toast or ciabatta.
