Spaghetti with tuna, capers and mint is a quick and easy dish to make which can be served as a main course or a starter. It is refreshingly light and full of flavours and aroma.

Ingredients
  

  • 500 g spaghetti or capellini
  • 50 g salt for the pasta
  • 5 litres water for the pasta
  • 125 g tinned tuna in brine not oil
  • 100 g caper rinsed
  • 1 small bunch mint chopped
  • 3 tablespoons olive oil extra virgin
  • pepper freshly ground

Method
 

  1. Bring the pasta water to boil in a large pot and add the salt.
  2. Add the pasta to the pot and follow the instructions on the packet for the cooking time.
  3. Drain the liquid off the tuna and break it up a bowl. Mix together with the capers, mint, olive oil and a good grind of black pepper. When the pasta is cooked, drain it and toss it together with the sauce.
