caramelised shallots

This kitchen classic is the perfect side dish for any meat, fish or vegetarian meal. It is a wonderful combination of flavours and aromas and yet such a simple and delicious creation.

Ingredients
  

  • 500 g shallot peeled
  • 60 g white sugar
  • 40 g butter
  • 2 tablespoons white wine
  • 2 tablespoons white wine vinegar
  • salt freshly ground
  • pepper freshly ground

Method
 

  1. Pour the sugar in to a saucepan and allow to caramelise at medium temperature. Do not allow it to get too dark.
  2. Add the butter and stir until the caramel no longer sticks to the saucepan
  3. Add the shallots, white wine and balsamic and allow to simmer for 20 to 25 minutes.
  4. Salt and pepper to taste.
