Baked cherry tomatoes not only look good, they are absolutely scrumptious. When they bake in the oven the skin ruptures releasing some of their juices which combines with the oil, basil and pepper to make an incredible sauce. The sugar caramelises slightly and works as a flavour enhancer. I guarantee they will be scoffed up so you might consider making a second batch.
ingredients:
500 g
cherry tomatoes
1 handful
basil torn
2 tablespoons
olive oil extra virgin
1 teaspoon
brown sugar
pepper freshly ground

method:
- Preheat your oven to 200°C
- Place the cherry tomatoes in an ovenproof dish and drizzle the olive oil over them. Sprinkle with sugar, add a good grind of salt and pepper and throw in the torn basil.
- Roll the cherry tomatoes around with your hand until they are covered with salt, sugar, pepper and oil and pop them in the oven for 15 minutes.
